Off screen buying simply means they do not place a buy order into the buy stack where it is 'on screen', but simply buy 'at market' or at the price on offer.

Buying after the market closes is restricted to the post close auction where bids and offers are placed after close and then 'matched out' at about 10 minutes after 'close' .... so you can place a buy or sell order and as long as there are buy or sell orders at the same matching price, you got yourself a deal.
