off screen sales are generally cross trades, ie. a broker has a customer wanting to sell for a particular price and also has a customer wanting to buy for that price. you dont see the orders appear in the market depth, but they do appear in the 'coarse of sales' (which is visible in commsec) and they do get counted towards the volume traded for the day.
