    On tomatoes, the nutrient of interest is called lycopene and it is unique in that it is not destroyed by cooking like many other plant compounds. The lycopene is richest in the slimy fluid around the seeds.

    Tomato paste is the best source of this nutrient simply because many tomatoes are condensed into the paste.
