When you add multiples of these GRADUAL CHANGES over very long periods of time (millions of years) you do get the "change of species".

Encyclopedias refer to over a million species of animals. Some investigators have said that just 43 “kinds” of mammals, 74 “kinds” of birds, and 10 “kinds” of reptiles could have produced the great variety of species of these creatures that are known today.
There is abundant evidence that through selective breeding new species have been produced.
This is adaption within a kind and not to be confused with evolution which makes the claim new "kinds" can develop over time.
This however has not been achieved in controlled conditions. The Biblical term “kind” is not a scientific term and should not be confused with the scientific designation “species.”
