Option holders bought the right to purchase shares at a pre-determined price on a pre-determined date.
There is nothing stopping the option holders buying their allocation of shares on the due date, in fact it would be beneficial to the company and to all shareholders if they did!
The company should not extend the date.
Options are just that, an option. Take it or leave it.
