Copies should be fine. I am a lawyer I can assure you that the majority of documents produced in court are copies - the only time that an original would be required is if the authenticity of a copy was called into question (and that the authenticity was relevant to an issue in dispute).
In circumstances where the originals were scanned into electronic form in the ordinary course of business and without any alterations I think it is unlikely to ever be an issue.
