New Zealand has its own unique Fish swim bladder from the Ling fish which has yet to penetrate the Chinese markets.
Ling fish is sustainable and cheaper than a lot of alternatives that China is importing most ranging up to $1500 USD for a KG of lower quality maw. Yes, there is such thing as Maw quality surprisingly and the Chinese will pay extra for better quality. NZS currently has the "Driest" maw product in the world with I think 4% moisture content making it preserve better.
The recent $4.4m contract NZS signed also seems to disagree with your statement. The decline of other fish populations around other parts of the world points to a need for a sustainable source of Maw for China and New Zealand has the answer.
And I think we both know it's not just a fish Monger anymore.
