Fusion tomato pasta sauce
In a medium saucepan fry the following in a little olive oil until starting to brown:
1 medium diced onion
2 to 4 cloves smashed garlic
Add the following and simmer for at least ½ hour:
400 gm diced tomatoes
One packet of chicken necks and 1.5 cups of water or 1.5 cups chicken stock
½ cup wine
¼ cup tomato paste
1.5 tablespoons dried basil leaves
1.5 tablespoons masterfood Italian herbs
A little black pepper to taste
Season with one or all of the following:
1 tablespoon rendang paste
1 tablespoon xo paste
1 tablespoon scrimp sambel paste
A few splashes light soy sauce to taste
A few splashes liquid smoke
Remove the chicken necks
Serve with four serving of pasta
