Was your amusement derived from an attempted pun on the word 'empirical' which sounds a little like 'empire' as in British Empire or just general JonnoH mirth?
Evidence is by its very nature "empirical" - it comes from Latin video meaning I see. Thus any evidence is empirical if you can see it - or, by extension, feel it, touch it, hear it, or smell it.
The alternative is more difficult to explicate, but, say, some truths, like those of ethics, or basic principles of natural science and reasoning, seem to be non-empirical - and hence the difference made between these two sorts of proof.
But the description above is somewhat at odds with Wikipedia which provides a different less visual derivation of the term 'empirical evidence' below.
