They just capture them at a point on their migration route and hold them in grow-out pens for a few years before harvesting, same as Port Lincoln.
In fact, seems to be a remarkably similar story to what led to CSS, just in the northern hemisphere.
Step 1. Overfish bluefin tuna.
Step 2. Begin ranching them to improve yield from diminishing wild stock.
Step 3. Decide to cut out mother nature by closing life cycle.
Step 4. Partially achieve this, burn lots of money in the process
Looks like their history is about as volatile as CSS too!
