"So what's to stop Apple from providing a software update copying all of the functions of the "Spacetalk" watch?"
I doubt they will want to do it that way because if it is essentially their adult watch with a software update, what price will they sell it at? If they price it to be competitive as a kids watch, how do they justify the pricing of the adult version? It may be damaging to their pricing policy unless it's an entirely different watch.
