That's why you have a good battery management system. The cheaper EVs with lower build quality generally don't have good BMS's.
Heat and cold do affect performance of lithium based batteries but again a decent EV will have a BMS that heats or cools the battery to ensure optimum performance. My Tesla Powerwall home battery has an in-built heater and a coolant based cooling system.
The availability of charging stations......that will change as EV take up increases.
