    Pickled cherries

    Simmer in a pot for up to 3 minutes the following:

    500 gm fresh cherries with steams or frozen cherries
    1.5 cup water
    ½ cup distilled or balsamic vinegar
    ¼ to ½ cup brown sugar honey or maple syrup


    and some of the following:
    1 to 2 tablespoons zest
    2 sprigs of thyme
    4 slices ginger
    1 or 2 teaspoon whole black peppercorns
    1 teabag of herbs
    2 star anise
    2 bay leaves
    2 splashes liquid smoke
    1 clove
    pinch of chili
    ½ teaspoon salt


    turn off and add a couple of splashes or rum brandy or the like

    Place in sterilized jars or refrigerate

    Serve with meat cheese board or the like
