beef wellington:
Stuff fillet with the following:
Fried duck liver or liver moose.
Truffle paste.
A little liquid smoke.
Wrap all round with puff pastry.
Brush with egg or milk wash.
Bake until it reaches 55 to 60 c.
Serve with jus.
