Pork belly and lentils
In a large plastic bowl place
1.5 kg scored pork belly
1.5 litre boiling water
100 to 200 gm salt
150 gm demerara sugar
1 tablespoon black peppercorns
2 cloves
1 bay leaf
sprig fresh thyme
Marinate for a day
Rinsed the pork belly
Roast the following for at least 1.5 hour at 150 degrees

Heat a little oil in a medium saucepan and fry the following until starting to brown
1 diced onion
75 gm diced bacon or pancetta
Add the following and cook for around ½ hour:
400 ml chicken stock
200 gm Puy lentils
175 ml white wine
1 tablespoon herbes de provence
1 teaspoon miso
2 splashes light soy sauce
2 splashes liquid smoke
Serve pork with lintels
