Fusion clay pot rice made in a saucepan:
In a medium saucepan soak the following for at least ½ hour:
1.5 cup long grain rice.
2.0 cup water or chicken stock.
Then simmer on low heat for ten minutes.
Then arrange some of the following on top of rice and continue to simmer for 3 to 4 minutes:
300 gm chicken stir fry marinated in the following:
¾ tablespoon light soy sauce.
¾ tablespoon rice.
1 teaspoon pressed ginger.
1 teaspoon sugar.
100 mm piece of sliced cured pork belly
3 slice sweet Chinese pork sausages or duck liver sausages.
½ cup small dried pre-soak mushrooms.
½ to ¾ cup dried salted fish.
¼ cup pre-soaked dried shellfish.
1 to 2 servings of bok choy or broccoli.
1 or 2 sliced spring onions.
Serve with a sauce make with some of the following:
1 to 3 tablespoons oyster sauce.
1 tablespoon fish sauce.
¼ dozen splashes sesame oil.
¼ dozen splashes xo sauce.
¼ teaspoon sugar.
⅛ teaspoon white pepper.
If using chicken or dried seafood cook longer, but add vegetables in a little later.
