Lyonnaise Pork Belly:
2 to 3 kg pork belly.
Score meat side.
Marinate with the following chopped:
1 to 2 sprig rosemary.
2 to 4 sprigs thyme.
1 dozen anchovies.
In a roasting pan barbecue on the charcoal webber.
Also roast the following for ½ hour:
6 to 9 sliced potatoes.
3 to 6 sliced onions.
4 bay leaves.
Finish off potatoes and onion with the following:
1 litre of chicken stock.
300 ml cream.
300 ml dry white wine.
Pressed garlic.
Soy.
Worcester.
Thicken slightly with corn flour if desired.
