red onion rings
finely diced garlic
small strips of bacon
cream
chicken stock
sliced potato
grated cheese
In a greased baking dish (we use coconut oil), layer onion rings, sprinkles of garlic and bacon, then potato, then rinse and repeat. You should get about 3-4 layers depending on the depth of the dish.
Mix a cup of cream and 1/2 to a full sachet of chicken stock (think it's about 1tbsp of concentrate in a gelatinous state, you know the ones) and pour it into the dish. Grate some cheese on top. Bake it for around 40-45mins until slightly brown on top at 170 degrees. Let it sit in the (off) oven for about 15mins, then get your spoon and serve with a big T-bone or something lol.
This is an amazingly yummy side dish, as often as not I just have a serve of it with nothing more than a nice cut of red meat. Man now you've got me hankering for one, so I'm off to beg the mrs!![]()
