I like you're thinking, but really its not that big a use case.
Data centres only run their generators for a few minutes per year, usually just for testing, normally they just run on grid electricity.
That said some of them pay spot price, not flat price so are exposed to high intermittent costs and may start generators when electricity becomes more expensive than fuel.
