WE spent yesterday morning putting a very nice Limo cross steer in the freezer. Weighed 215 kg dead with 8mm of fat on P8.
Hung in coolroom for 10 days. (The siversides are still soaking).
All meat is vacuum sealed and we find it keeps very well with no freezer burn.
Had to chose what cut for dinner last night and went for Rib Fillet.
Absolutely superb.
PS Can't wait to put the bolar of blade in the Weber when the boys come home. Top tucker!!
