Our little machine to vacuum seal is my favourite toy. I seal cucumbers and tomatoes and other fresh food to go away camping. A couple of years ago I did small packets of lemongrass, kaffir lime leaves, basil, parsley, mint, and coriander, I got two weeks out of them. Come summer I will make more roast chilli jam, beetroot relish, tomato relish, we have had our beautiful three day marmalade and blood plum jam all winter. While we prefer to eat fresh there is always something to put away. My deli will also cryovac free for me, olives (the bright green Sicilian ones), and other stuff to take away. I also make beetroot chips which are to die for, sliced thin and oven roasted. At the end of last summer we also dehydrated parsnip which was great to add to soups. We have a great strawberry crop at the moment and I am wondering how they go frozen strait from garden to use later, (if there are any left after the grandkids).
