In pan lightly fry or barbecue:
Four snapper fillets.
Diced small onion.
Two knobs smoked butter.
½ teaspoon garlic powder.
½ teaspoon onion powder.
½ teaspoon smoked paprika.
Separately in a pan make the sauce:
1 small capsicum or zucchini.
1 can of chopped tomatoes or ¾ cup semi dried tomatoes.
1 teaspoon creole seasoning.
½ teaspoon smoked paprika.
½ teaspoon thyme.
¼ teaspoon cayenne pepper.
Finish off with the following:
1 cup cream.
2 tablespoons chopped parsley.
