As someone who makes a living on betfair i can tell you it is a very grey area. I pay no tax on my gambling winnings although i make money week in week out . I believe that if your buisness is gambling then you can be taxed but dont know of anyone who actually does.
If they start taxing winnings then you would be able to claim losses art the tab etc as tax deductable , so i guess they wouldnt want to open that can of worms
