    Beef stew or goulash or chilli:

    In a large saucepan fry the following to caramelise:
    3 diced onions.
    500 gm beef trimmings for taste.
    2 or 3 whole carrots cut in half if desired.

    Allow to cool enough to skim off the fat and remove the beef trimmings and carrots if desired.


    Add the following and simmer for at least ¼ hour:
    2 can oxtail soup.

    And ‘some’ of the following:
    1 or 2 cans rinsed white beans.
    Two cups water with 2 beef oxo or beef stock.
    ¼ to ½ dozen tablespoons tomato paste.
    ¼ dozen pressed garlic.
    1 or 2 tablespoons smoked sweet paprika.
    ¼ dozen bay leaves.
    2 teaspoons dried marjoram.
    1 teaspoon caraway seeds.
    Liquid smoke to taste.

    Serve in large soup bowls with ‘some’ with the following:
    Raw minced sliced or diced beef.
    Pasta.
    Red wine vinegar.
    Black pepper.
    Fish sauce.
    Smoked tobacco sauce.
    Soy sauce.
    Tomato sauce.
    Worcestershire.
    Xo.
