1. "The Lord-He who stretches out the heavens and lays the foundations of the earth, who forms the human spirit....." (Zech 12:1)
2. ".....and the spirit who returns to God who gave it" (Ecc 12:7)

What does the word "form" mean? To create, to mould, to fashion, to produce.
What does the phrase "gave it" mean? To send to, to assign to, to gift with, to attach to.

Are you saying that God did not form (create/mould/fashion/produce) the human spirit?

This verse says that God "produced" the human spirit. i.e the human spirit is the product of God.
But are you saying, and I quote, that "the human spirit is the product of the brain"?
