French raw milk cheeses are really something else. When one gets to try many of them - it's really no wonder why the French continually fight the EU to maintain the tradition of raw milk cheeses
they are just amazing.
Do they sometimes have diseases? Yes. But, IMO ----- you would have to be very unlucky - and, if they were banned --------- we truly would miss one of the incredible joys in life and a stunning loss of tradition.
I'm happy to take a tiny risk.
