Grilled lamb cutlets and steaks for dinner tonight

Coat lamb cutlets and steaks, with the following:

A splash of light soy sauce

A splash of lime juice

A splash of liquid smoke

A little pepper

Grill on one side only

To form the dressing, mix the following:

¼ cup of olive oil

¼ cup of cultured butter

¼ cup of crumpled feta blue or goats cheese

a small hand fill of chopped fresh herbs

And some of the following (optional):

¼ cup of minced onion

¼ cup of concentrated chicken stock

a teaspoon of zest

a teaspoon of minced ginger

½ to one teaspoon of minced garlic

a splash or two of lime juice

a splash or two of soya sauce

a splash of sake mirin brandy or whisky

a pinch of jerk

a shake of pepper
