Rissoto with sauce:
Sauce:
Soak 25 gm dried powdered porcini mushrooms in 1 cup boiling water.
Fry the following:
1 small minced onion.
¼ cup rendered beef fat.
A knob of butter.
Then add the following:
300 gm sliced button mushrooms.
¼ dozen cloves pressed garlic.
A piece of rosemary sage or thyme.
Then finish off with the following:
1 cup cream.
½ glass white wine.
Worcester to taste.
Soy sauce to taste.
Thicken with corn flour if desired.
Strain out the solids if desired serve.
Serve with firm to the bit risotto or steak.
