    Roast beef

    2 kg of topside or rump

    Season with fresh rosemary and salt

    Sear in a fry pan with one or two sliced onions

    Coat with a little prepared mustard

    To cook in almost half the time cut the beef into two pieces

    Roast in a roasting dish with foil over as 180 c for at least ½ hour

    Gravy:

    Remove roast

    Add:
    500 ml of water
    ½ cup of white wine
    two tablespoons of black current or blackberry jam
    A couple of splashes of light soy sauce
    A couple of splashes of liquid smoke

    bring to a simmer over the hob

    bring to a simmer

    thicken slightly with corn flour
