Fusion chickem nduja:
Marinate four to six servings of chicken in nduja.
Barbecue on the charcoal webber.
To make tomato sauce simmer the following:
400 gm can chopped tomato.
250 ml chicken stock.
¼ cup rendered beef fat.
1 to ½ dozen anchovies.
4 tablespoons tomato paste.
2 tablespoon chipotle sauce.
2 tablespoon soy sauce.
2 tablespoon Worcestershire.
1 tablespoon rum.
Serve chicken with sauce soft cheese and anchovy pesto.
