    Romesco Sauce:


    In a small pan simmer 2 chipotle chilis in a little water or just use chipotle sauce to taste.

    Mix with the following and chop or pulse with a stick blender with the following:
    1 large or 2 medium very ripe tomatoes.
    4 roasted piquillo peppers.
    2 slices sliced stale white bread.
    ¼ cup dry toasted almonds.
    ¼ cup toasted hazelnuts.

    ¼ cup olive oil.
    ½ to 1 tablespoon sherry vinegar.
    1 tablespoon smoked sweet paprika.
    2 cloves garlic.
    Salt and pepper to taste.

    And ‘some’ of the following:
    Orange zest to taste.
    ¼ to ½ dozen anchovies.
    A few splashes of soy sauce.
    A few splashes of Worcestershire.

    Serve with bread meat seafood soup stew or vegetables.
