In a wok fry the following in a splash of oil for a minute or more:
2 tablespoons Sichuan chilli bean sauce.
2 tablespoons sauce or two chipotle chilis. 2 tablespoons salted black beans.4 clove pressed garlic.
1 tablespoon grated ginger.
A pinch chilli powder if desired.
Turn off and add the following:600 gm tofu.
1 cup sliced dried salted green vegetables/ 250 gm beef or pork mince.
1 cup water or stock.
A few splashes rice wine.
A few splashes xo sauce if desired.
½ teaspoon ground Sichuan pepper if desired.
