Chipotle steak:
Marinate four serving / 1kg of chicken pieces in some of the following:
½ cup tropical fruit juice.
1 desert spoon bourbon.
1 to 2 teaspoon rock salt.
1 desert spoon soy sauce.
1 to 2 teaspoon chipotle tobacco sauce.
1 to 2 teaspoon smoked tobacco sauce.
½ teaspoon jerk paste.
½ teaspoon herbes de Provence.
Barbecue on the charcoal webber or fry in 5 mm oil.
Serve with warm salsa made by frying in a pan separately the following until brown:
¾ cups lardon.
¾ cups onion.
Add some of the following and heat through only:
2 cups diced stone fruits or berries.
¼ cup diced fresh herb.
1 or 2 desert spoons honey or maple syrup.
½ teaspoon chipotle tobacco sauce.
½ teaspoon smoked tobacco sauce.
½ teaspoon herbes de Provence.
Finish with a splash balsamic.
Serve the steak with the salsa and salad greens.
