seafood salads for summer lunches, page-9

no....I rarely use mint these days....as I rarely eat lamb, or any meat.

in another life, I made mint sauce to accompany the lamb dish
my potato salad recipes
potato, boiled eggs, corn, ....sometimes pineapple pieces...and or shredded tasty cheese

my daughter did a potato, bacon, and egg salad

sometimes she would do a potato, with shredded tasty cheese and shredded carrot...celery was an optional extra
all the above with the home made mayo

and then sometimes, we did a potato salad with all of the above ingredients

prior to these new recipes, my old original first favourite was ...potato, egg and onion, with a french style dressing...of olive oil and vinegar.....

I believe this was the original style recipe that mother made.

It was only after one of my experiments, or combining my favourite food, that I came up with the first one above.
which has been a real hit with all the family ever since.
