    Serbian rice

    Fry in a medium sized pot, in little oil until brown:
    1 cup diced egg plant
    1 diced onion
    1 diced capsicum

    Add:
    4 to 5 cups of water or stock
    100 to 200 ml diced tomatoes
    ½ to 2/3 cup of risotto rice


    And ‘some’ of the following
    1 cups of diced smoked pancetta or other meat
    ¼ cup of basil or other herbs
    ½ cup of white wine or ¼ cup of masala
    2 tablespoon of tomato paste
    1 teabag of herbs
    A couple of splashes light soy sauce
    ½ to 1 teaspoon of smoked paprika
    Pepper to taste

    Boil for around ¼ hour until the rice is cook

    Add more water to form sauce if desired

    Serve with anchovy crumbs or / and gremolata
