    This comment raises a good point:

    Salting before help tenderise the meat and draws the flavour all the way through, this is helpful if you do not have time to properly rest the meat and let it get to room temperature before cooking. Seasoning the meat after will give the tongue a direct contact with the salt so increase overall salty taste.
