I turn the gas on to the frying pan and salt the pan when it is hot, then add the steak (place in and don't move). When I flip it, I swish the steak around the pan to pick up the remaining salt that is normally dissolved in the the steak juice that has be leached whilst cooking. Must admit though, I don't have a big frying pan, only a 20/22cm one.
Of late I been cooking, well really simmering my steak in a small amount of pepper steak sauce, gotta watch it frequently though, otherwise the sauce burns and well ruins the meal.
