Your right about keeping it simple, simply salt, cracked pepper, olive oil and a little crushed garlic always helps things along, let it sit for about 1 hrs prior to cooking and things will be really good. I always use a grill and stay away from a hot plate which lets fat drip away. Cooking in a fry pan or hot plate usually ends up with a oily piece of steak. The more you cook the steak the more moisture you lose along with flavour.
A medium/medium rare steak is usually the highpoint of flavour.
