This is for my evening meal. I hate preparing food for dinner and this salad is more than enough for me. It is baked sweet potatoes with mixed herbs, baby beetroot, walnuts, asparagus, sweet corn, spinach leaves which are hard to see but lots are there, and Meredith goats cheese. Will dress it all with apple vinegar and olive oil dressing, just before eating.
