ms m buffet,i have just finished cooking my home "made" corned silverside using salt,pickling spice,speedcure,garlic cloves etc.left in fridge covered for a week.it tasted o.k. but was fairly chewy.i don't know if it was just a bad piece of silverside or if next time i should try a different cut next time.i am just so sick of buying corned beef and being disappointed so tried doing it myself and i'm still in the same boat.i've been buying pickled pork from the supermarket instead and that has been good.
