The baffle issue (with the pizza oven), is to do with being able to have a very strong fire going, and drafting correctly through the flue whilst not have smoke emerging out of the door.
It was solved by with clever baffling built into the door to direct the inflow and the flue gases and then having the door partially inserted whilst firing.

Tock and I have signed secrecy agreements on the details!
Patents not yet granted :)
