raw tuna plays a big role in sashimi food, huge in Japan but definitely one of those foods where popularity is growing all over the developed world because of the health aspects. Eating it raw provides fish oils/omega 3 that has not been processed/altered, heat can compromise them because of the cooking process.

If Stehr can nail this then long term outlook will be good. After reading that Switzer article unsinkable posted I'm not game to say he "can't' do it. lol
