I still don't see the explanation WHY we should shed the blood of innocent animals for our sins and not our own blood when we - given free will by God - are alone responsible for our action.

Akgo01, The sin that needs to be atoned for is not ours alone but includes the sin we inherited from Adam(Romans 5:12). God's perfect justice required a sacrifice the exact equivalent. Perfect human life was lost for both Adam and his descendants, therefore only a perfect human could supply that equivalent.
The psalmist lamented: “Not one of them can by any means redeem even a brother, nor give to God a ransom for him; (and the redemption price of their soul is so precious that it has ceased to time indefinite).” The New English Bible says that the ransom price was “for ever beyond his power to pay.” (Psalm 49:7, 8) Who, then, would provide the ransom? Only Jehovah could provide the perfect “Lamb . . . that takes away the sin of the world.” (John 1:29) God did not send some angel to rescue mankind. He made the supreme sacrifice of sending his only-begotten Son, “the one he was specially fond of.”—Proverbs 8:30; John 3:16.

The expression that best describes matters was the one used by Jesus himself at Matthew 20:28: “The Son of man came, not to be ministered to, but to minister and to give his soul a ransom [Greek, ly'tron] in exchange for many.”

The love Christ showed in laying down his life in our behalf according to God’s will is so outstanding that as our appreciation grows, our heart is deeply moved. We in turn can demonstrate our appreciation by using our free will in like manner:(2 Corinthians 5:15) "and he died for all that those who live might live no longer for themselves, but for him who died for them and was raised up."
