Yay,salad days are here again!!
I think you might like this one s/p (if you can get the organic ingredients that is) I like the colours when you leave the mandarin in segments:
Green Bean and Pistachio Salad
300g green beans, cut and blanched for a few minutes in boiling salted water
400g tin butterbeans (lima beans) drained and rinsed
handful of chopped mint leaves
1/2 cup pistachio kernels, toasted
grated zest and juice of 2 mandarins - or leave mandarins in segments - or a bit of each
3 tablespoons extra virgin olive oil
