    Soufflé pancakes

    Beat 6 egg whites until they form stiff peaks.

    As well in another small bowl whisk one cup of buttermilk with the six egg yolks.

    In a medium bowl fold in the following:
    The butter milk or milk and egg yolk mixture.
    One cup of flour.
    The egg whites.


    A pinch of salt.


    For the savoury version fold in ‘some’ of the following:
    One cup of grated cheese.
    Half cup minced cured meat.
    ½ dozen chopped anchovies.
    Two or three tablespoons chopped soft herbs.

    A splash of sake.
    A few pinches of miso.

    For the sweet version fold in ‘some’ of the following:
    1 cup berries or diced stone fruit.
    ½ cup chopped glazed fruit.
    ¼ cup brown sugar honey or maple syrup mixed in with the butter milk.
    ¼ cup mixed glazed peel.
    A splash of vanilla,

    Pour into single serve oiled or lined pie tins.

    Bake in a 200c preheated oven for 15 to 20 minutes.
