    fusion Scandinavian pork:

    Blend in the food processor some of the following:
    The leaves of a small bunch of dill.
    A few sprigs of thyme.
    ¼ to ½ dozen cloves garlic.
    ¼ to ½ bay leaves.
    1 dessert poon juniper berries.
    ½ dozen bay leaves.

    Score and marinate more of less 3 kg unboned pork belly in the following overnight:
    1 cup hot water apple juice or vegetable stock.
    The above.
    ¼ cup brown sugar.
    1 or 2 tablespoon salt.

    Then place in a pan and cover with foil.

    Barbecue with its lid on or roast.

    At the end grille with the skin side up so the skin forms crackle.
