Mushrooms:
Soak 20 gm porcini mushroom powder in 100 ml water for 20 minutes.
In pan fry:
200 gm of sliced mushrooms.
2 tablespoon smoked butter.
1 tablespoon olive oil.
Then add the following:
150 ml of chicken meat stock or vegetables stock.
The 20 gm porcini mushroom powder pre-soaked in 100 ml water.
50 ml dry white wine.
1 tablespoon soy sauce.
1 tablespoon Worcestershire.
½ teaspoon dried wild rosemary.
Finish with 75 ml cream and 3 tablespoons blue or goats cheese and thicken slightly with cornflour if desire.
