Cut into steaks
Likely sear on each side
Serve with flavored butter by beating 2 cups of unsalted butter until creamed
Mix in ‘some’ of the following:
1 cup of chopped herbs such as parsley chives and tarragon
2 to 4 tablespoons truffle paste
2 to 6 cloves chopped garlic
1 teaspoon miso
a few splashes of liquid smoke
a few splashes of spirits
½ teaspoon finely grated lemon zest
1 teaspoon fresh lemon juice.
¼ teaspoon pepper
