butter sauce:
In the food processor blend the following:
8 tablespoons butter.
1 small shallot.
3 garlic cloves.
3 tablespoons reasonably concentrated chicken stock.
2 egg yolks.
2 - 3 tablespoons horseradish.
2 tablespoons Dijon mustard.
1 tablespoon sake.
1 tablespoon soy sauce.
1 tablespoon Worcestershire.
1 teaspoon xo.
A pinch of cayenne pepper.
Serve with the following:
Chopped chives.
Chopped thyme.
Serve on meat and green vegetables.
