Deconstructed Thai beef salad:
Prepare four servings of following and arrange separately:
Lightly smoke or barbecue steak and slice.
Cook glass noodles.
Salad greens.
Serve with the following dressing:
3 tablespoons lime juice.
2 tablespoons fish sauce.
1 tablespoon finely chopped cilantro / coriander stems.
1 tablespoon olive oil.
1 tablespoon soy sauce.
1 tablespoon sake.
1 dessert spoon brown sugar.
½ teaspoon chili deseeded and finely minced or just use a teaspoon of xo or chipotle sauce.
¼ teaspoon pressed garlic (½ small clove).
